Firstly, it's shade grown...
For approximately four weeks before harvest, the matcha plants are shielded from direct sunlight. Shielding the plants from direct sunlight creates a matcha magic trick—more of all the amazing nutrients it contains; more chlorophyll, amino acids, antioxidants, etc.—you get this gist. This also enhances both the vibrant green color and the rich flavors of the matcha.
Then, it's hand picked…
Once the matcha leaves have undergone the shade growing process and reached optimal maturity, they are carefully hand-picked. The timing is crucial; we select the leaves when they are young, typically after four weeks of growth. This is when the leaves contain the highest concentration of nutrients, resulting in matcha with exceptional flavor, and health benefits.
Followed by being steamed & air-dried...
After the hand-picking process, the matcha leaves embark on their transformation into tencha; the raw material for matcha. The leaves are promptly steamed, a vital step that halts oxidation and preserves the freshness and vibrant green color. This brief steaming process is essential for capturing the unique characteristics of matcha.
Following steaming, the leaves are air-dried, allowing them to retain their delicate flavors, and nutrients. This drying process ensures that the matcha maintains its integrity while it progresses towards becoming the ultimate form of matcha.
Now it's time for the grinding...
The dried leaves, known as tencha, are then prepared for the final stage of the matcha-making journey. Using traditional methods, the tencha leaves are ground into an incredibly fine powder on granite mills. This slow and meticulous grinding process ensures that the matcha attains its velvety texture and preserves its rich flavors.
With each gentle rotation of the granite mill, the tencha leaves transform into the vibrant green powder we know, and love as matcha.
